Vegan Chocolate Chip
35 min / 25 min prep time; serves 9 - 18 cookies.
Ingredients:
3/4 cup olive oil or vegetable oil
1 cup sugar (or you can add more if you want it sweeter, but i use just 1 cup)

1 tbsp. flax seed
1/2 cup soymilk neither plain or vanilla flavor
2 cups flour (unbleached is better but it doesn't matter)
3/4 cup cocoa powder
1 tsp. baking soda
1/2 tsp. salt (optional)
1 1/2 cup of semisweet vegan chocolate chips or it depends on how much you want
Instructions:
* Preheat oven to 350 degrees Fahrenheit
* Grind flax seed in a blender until fine powdered, add soymilk and mix and set aside.
* In a large bowl, sift together cocoa, flour, baking soda and salt (optional)
* Cream the sugar and oil and in a separate bowl.
* Add the mixture of soymilk and flax seed and mix well.
* Stir in the vanilla.
* Slowly mix in the dry ingredients and then mix the chocolate chips.
* Roll dough into 1" and flatten into disks in a size that you want your cookie to be.
* Place on ungreased cooke sheet and bake for 12-15 minutes.
* Let it cool in the cookie sheet for a while and then remove it with spatula and move the cookies
to cooling rack and cool completely.
